Sticky Honey-Soy Chicken Thighs

Basmati Rice and Sesame Stir-Fry Vegetables

Ingredients

  • 1 Tbsp vegetable oil
  • 1 Tbsp sesame oil
  • 2 lb boneless, skinless chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp bottled minced garlic
  • 3 Tbsp honey
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • ¼ cup sliced green onions

Instructions

  1. Heat vegetable oil and sesame oil in a large nonstick skillet over medium-high heat.
  2. Sprinkle chicken with salt and pepper and brown in hot oil 3 minutes on each side.
  3. Stir together garlic, honey, soy sauce and vinegar; pour over chicken in skillet.
  4. Cover, reduce heat, and simmer 10 minutes or until chicken is done; uncover and cook 3 minutes longer or until sauce is syrupy.
  5. Sprinkle with green onions before serving.

  • 2 (8.8-oz) pouches microwavable basmati rice
  • 2 (12-oz) pkg microwavable stir-fry vegetables
  • 1 Tbsp sesame oil
  • 1 Tbsp low-sodium soy sauce
  • 2 tsp sesame seeds

Side Dish Instructions

  1. Microwave rice according to package directions.
  2. Microwave vegetables according to package directions; transfer to a serving bowl.
  3. Stir in sesame oil, soy sauce and sesame seeds; stir in rice, if desired.
