Red Curry Beef and Broccoli

Ingredients

  • 3 lb eye of round roast
  • ½ tsp salt
  • ½ tsp pepper
  • 1 green bell pepper, thinly sliced
  • 1 (5-oz) pkg sliced sweet onion
  • 1 Tbsp bottled minced garlic
  • 1 (13.5-oz) can light coconut milk
  • ¼ cup red curry paste (see Note)
  • 1 Tbsp crushed red pepper
  • 1 (12-oz) pkg broccoli florets

Instructions

  1. Trim beef, and cut into 1-inch cubes; season with salt and pepper.
  2. Place beef in a 5- to 7-quart slow cooker. Top with bell pepper, onion and garlic.
  3. Add coconut milk, curry paste and crushed red pepper. Cover and cook on LOW 8 hours.
  4. Microwave broccoli according to package directions.
  5. Stir broccoli into beef mixture, and serve over Cilantro Cauli-Rice.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 2 (12-oz) pkg frozen riced cauliflower
  • 2 Tbsp low-sodium chicken broth
  • 2 Tbsp chopped fresh cilantro (or use parsley)
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add cauliflower and broth; cover and cook 10 minutes.
  3. Remove from heat; stir in cilantro, and season with salt and pepper.
