Red Curry Beef and Broccoli
Cilantro Cauli-RiceIngredients
- 3 lb eye of round roast
- ½ tsp salt
- ½ tsp pepper
- 1 green bell pepper, thinly sliced
- 1 (5-oz) pkg sliced sweet onion
- 1 Tbsp bottled minced garlic
- 1 (13.5-oz) can light coconut milk
- ¼ cup red curry paste (see Note)
- 1 Tbsp crushed red pepper
- 1 (12-oz) pkg broccoli florets
Instructions
- Trim beef, and cut into 1-inch cubes; season with salt and pepper.
- Place beef in a 5- to 7-quart slow cooker. Top with bell pepper, onion and garlic.
- Add coconut milk, curry paste and crushed red pepper. Cover and cook on LOW 8 hours.
- Microwave broccoli according to package directions.
- Stir broccoli into beef mixture, and serve over Cilantro Cauli-Rice.
Side Dish Ingredients
- 2 Tbsp olive oil
- 2 (12-oz) pkg frozen riced cauliflower
- 2 Tbsp low-sodium chicken broth
- 2 Tbsp chopped fresh cilantro (or use parsley)
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Heat oil in a large skillet over medium-high heat.
- Add cauliflower and broth; cover and cook 10 minutes.
- Remove from heat; stir in cilantro, and season with salt and pepper.
