Trim beef, and cut into 1-inch cubes; season with salt and pepper.
Place beef in a 5- to 7-quart slow cooker. Top with bell pepper, onion and garlic.
Add coconut milk, curry paste and crushed red pepper. Cover and cook on LOW 8 hours.
Microwave broccoli according to package directions.
Stir broccoli into beef mixture, and serve over Cilantro Cauli-Rice.
For a milder dish, use 2 Tbsp red curry paste and 1/2 Tbsp crushed red pepper.
2 Tbsp olive oil
2 (12-oz) pkg frozen riced cauliflower
2 Tbsp low-sodium chicken broth
2 Tbsp chopped fresh cilantro (or use parsley)
½ tsp salt
¼ tsp pepper
Heat oil in a large skillet over medium-high heat.
Add cauliflower and broth; cover and cook 10 minutes.
Remove from heat; stir in cilantro, and season with salt and pepper.
