Cajun Slow-Cooker Chuck Roast
Roasted Cauliflower SteaksIngredients
- 3 lb boneless chuck roast, trimmed and cut into 1-inch pieces
- 1½ Tbsp Cajun seasoning
- 1 tsp salt
- 4 carrots, chopped
- 1 large onion, thinly sliced
- 1 cup orange juice
- 1 (14.5-oz) can chicken broth
Instructions
- Rub roast all over with Cajun seasoning and salt.
- Place carrots and onion in a 5- to 7-quart slow cooker; place roast over vegetables. Pour orange juice and broth around roast.
- Cover and cook on LOW 6 to 8 hours or until roast is very tender.
Side Dish Ingredients
- 2 heads cauliflower
- 3 Tbsp olive oil
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 450°F. Place 2 large rimmed baking sheets in oven while preheating.
- Remove stems from cauliflower.
- Cut cauliflower in half lengthwise. Cut halves into ¾-inch steaks. Cut cauliflower stems into chunks.
- Combine cauliflower, oil, garlic, salt and pepper; spread in a single layer on preheated pans.
- Bake 30 to 35 minutes or until brown and tender, turning once.
