Cajun Slow-Cooker Chuck Roast

Ingredients

  • 3 lb boneless chuck roast, trimmed and cut into 1-inch pieces
  • 1½ Tbsp Cajun seasoning
  • 1 tsp salt
  • 4 carrots, chopped
  • 1 large onion, thinly sliced
  • 1 cup orange juice
  • 1 (14.5-oz) can chicken broth

Instructions

  1. Rub roast all over with Cajun seasoning and salt.
  2. Place carrots and onion in a 5- to 7-quart slow cooker; place roast over vegetables. Pour orange juice and broth around roast.
  3. Cover and cook on LOW 6 to 8 hours or until roast is very tender.

Side Dish Ingredients

  • 2 heads cauliflower
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 450°F. Place 2 large rimmed baking sheets in oven while preheating.
  2. Remove stems from cauliflower.
  3. Cut cauliflower in half lengthwise. Cut halves into ¾-inch steaks. Cut cauliflower stems into chunks.
  4. Combine cauliflower, oil, garlic, salt and pepper; spread in a single layer on preheated pans.
  5. Bake 30 to 35 minutes or until brown and tender, turning once.
