Quick Chicken and Dumplings

Ingredients

  • 2 (32-oz) cartons organic chicken broth
  • Reserved shredded chicken (from Chicken with Leeks and Lemon recipe)
  • 1 (10.5-oz) can cream of chicken soup
  • 1 (12-oz) pkg frozen mixed vegetables
  • ½ tsp poultry seasoning
  • ½ tsp pepper
  • 1 (12-oz) can refrigerated buttermilk biscuits, quartered
  • ¼ cup chopped fresh parsley

Instructions

  1. Bring broth, chicken, soup, vegetables, poultry seasoning, and pepper to a boil over medium-high heat in a large saucepan; reduce heat and simmer.
  2. Roll out quartered biscuits, and drop, one at a time, into simmering mixture.
  3. Cover, and simmer, 15 to 20 minutes, stirring occasionally, until biscuits are cooked through.
