Garlic Toast Grilled Cheese Sandwiches

Ingredients

  • 1 (28-oz) can fire-roasted crushed tomatoes
  • 2 (14.5-oz) cans petite diced tomatoes
  • ½ red onion, diced
  • 1 (32-oz) carton chicken broth
  • ½ cup heavy cream
  • 3 Tbsp chopped fresh basil

Instructions

  1. Combine all tomatoes, onion and broth in a 5-to 7-quart slow cooker.
  2. Cover and cook on LOW 6 to 8 hours.
  3. Stir in heavy cream and basil.
  4. If desired, blend with an immersion blender until smooth.
  5. Season to taste with salt and pepper.

Side Dish Ingredients

  • 1 (14-oz) loaf frozen garlic toast, thawed
  • 1 (8-oz) pkg sliced mozzarella cheese

Side Dish Instructions

  1. Top 6 slices of garlic toast with cheese slices; cover each with 1 slice remaining toast.
  2. Heat a large nonstick skillet over medium heat. Add half of sandwiches, and cook 3 to 4 minutes per side or until garlic toast is browned and cheese is melted.
  3. Repeat procedure with remaining sandwiches.
