Pork Curry with Cilantro and Lime

Ingredients

  • 6 (1-inch-thick) boneless pork chops
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
  • 1 cup unsweetened coconut milk
  • 2 Tbsp mild curry paste
  • 3 Tbsp chopped fresh cilantro
  • 1 tsp fresh lime juice

Instructions

  1. Sprinkle pork lightly with salt and pepper.
  2. Cook, in batches if needed, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
  3. Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
  4. Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.
  5. Sprinkle with cilantro and lime juice.

Side Dish Ingredients

  • 1 (10-oz) pkg cauliflower florets
  • 1 onion, chopped
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ lb broccoli, cut into small florets
  • ¼ cup chicken broth

Side Dish Instructions

  1. Pulse cauliflower in a food processor until rice-like consistency.
  2. Sauté onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
  3. Add garlic; cook 2 minutes.
  4. Stir in cauliflower, broccoli, and broth; cover and cook 15 minutes. Season with salt and pepper to taste.
