Pepper Steak with Mushrooms

Ingredients

  • ¾ lb top sirloin steak, partially frozen (or use London broil steak)
  • 1 red bell pepper, cut lengthwise into strips
  • 1 (8-oz) pkg mushrooms, quartered
  • ¾ cup chicken broth (or use beef broth)
  • 2 cloves garlic, minced
  • 2 Tbsp soy sauce
  • 2 tsp sesame oil
  • ½ tsp ground ginger
  • 1 Tbsp cornstarch
  • 1 Tbsp cold water
  • 2 Tbsp chopped fresh flat-leaf parsley

Instructions

  1. Cut steak across the grain into ¼-inch-wide strips.
  2. Place all ingredients except cornstarch, cold water, and parsley in a 4-quart slow cooker.
  3. Cover and cook on LOW 6 to 7 hours or until beef is tender.
  4. Increase heat to HIGH. Whisk together cornstarch and cold water; stir into cooker.
  5. Cover and cook 15 minutes or until sauce is thickened. Season with salt and pepper to taste; sprinkle with parsley.

  • 1 Tbsp olive oil
  • 1 (16-oz) pkg frozen cauliflower florets
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp soy sauce
  • ¼ tsp garlic salt
  • ¼ tsp lemon-pepper seasoning

Side Dish Instructions

  1. Heat oil in a large skillet; add cauliflower and remaining ingredients.
  2. Cover and cook over medium-high heat 12 minutes or until cauliflower is tender, stirring occasionally.
  3. Uncover and cook 2 minutes.
