Salmon with Honey-Citrus Sauce

Ingredients

  • ¾ cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp fresh lime juice
  • 2 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 tsp chopped fresh thyme (or use dried)
  • 6 (6-oz) salmon fillets
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Combine orange juice, lemon juice, lime juice and honey in a small saucepan .
  2. Bring to a boil, reduce heat, and simmer 10 minutes or until reduced by half.
  3. Stir in mustard and thyme.
  4. Preheat oven to 450°F.
  5. Place salmon on a foil-lined rimmed baking sheet; sprinkle with salt and pepper.
  6. Brush salmon with half of orange mixture.
  7. Bake 10 to 12 minutes or until salmon flakes with a fork.
  8. Drizzle salmon with remaining orange sauce.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1½ lb Brussels sprouts, trimmed and halved
  • 1 tsp bottled minced garlic
  • 2 Tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add Brussels sprouts.
  3. Cook 5 minutes, stirring occasionally.
  4. Add garlic, vinegar, salt and pepper.
  5. Cook 5 to 7 minutes or until vinegar is evaporated.
