Warm Roast Beef Sandwiches with Balsamic Onions
Fruit Salad with Honey-Orange DressingIngredients
- 3 Tbsp olive oil
- 2 large sweet onions, thinly sliced
- 2 Tbsp balsamic vinegar
- 2 (5-oz) loaves Italian bread, split and toasted
- ⅓ cup creamy horseradish sauce
- 1 (14.5-oz) can low-sodium beef broth
- 1½ lb shaved low-sodium deli roast beef
- 3 cups baby arugula
Instructions
- Heat oil in a large skillet over medium-high heat; add onions.
- Cover and cook 10 minutes or until onions begin to soften.
- Uncover and cook 5 minutes longer, stirring frequently, until onions begin to brown; add vinegar.
- Cook 1 minute.
- Meanwhile, spread cut sides of bread with horseradish sauce.
- Heat broth in a saucepan over medium-high heat; add roast beef, and let stand until hot.
- Divide roast beef evenly among bread, and top with onions and arugula.
- Serve with broth for dipping, if desired.
