Chicken Fried Rice Bowls

- 2 (8.8-oz) pouches microwavable whole grain brown rice
- 1 Tbsp vegetable oil
- 1 red bell pepper, chopped
- 1 cup matchstick carrots
- 1 cup frozen peas
- 6 cloves garlic, minced
- 1 Tbsp minced ginger
- 1 rotisserie chicken, shredded
- ¼ cup soy sauce
- 2 tsp sesame oil
Instructions
- Cook rice according to package directions; cool completely (chill, if time allows).
- Heat oil in a large nonstick skillet over medium-high heat; add bell pepper, carrots, peas, garlic and ginger.
- Cook, stirring, 3 to 4 minutes or until crisp-tender.
- Stir in chicken, cooled rice, soy sauce and sesame oil.
- Cook, stirring, 2 to 3 minutes or until heated. Season with salt and pepper to taste.
- Serve in bowls with additional soy sauce.

- ½ (4-lb) pkg frozen potstickers (chicken and vegetable dumplings)

- Cook potstickers in a large nonstick skillet according to package directions.
