Slow Cooker 15-Bean Soup
Gruyère Cheese ToastsIngredients
- ½ (20-oz) pkg 15-bean soup mix (see Note)
- 1 (28-oz) can no-salt-added fire-roasted diced tomatoes
- 1 (32-oz) carton low-sodium vegetable broth
- 1 (8-oz) pkg diced trinity mix (green bell pepper, onion, and celery)
- 1 large carrot, chopped
- 1½ Tbsp bottled minced garlic
- ½ tsp salt
- ½ tsp pepper
- ½ Tbsp Italian seasoning
- 4 slices center-cut bacon, cooked and coarsely crumbled
Instructions
- Discard seasoning packet from beans.
- Rinse, drain, and transfer beans to a 5-quart slow cooker.
- Top with tomatoes and remaining ingredients, except bacon.
- Cover and cook on LOW 10 hours or until beans are tender.
- Garnish with bacon.
Side Dish Ingredients
- 1 (4-oz) whole wheat hoagie roll, cut into ½-inch slices
- 1 Tbsp olive oil
- ¼ cup shredded Gruyère cheese
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F.
- Toast bread slices on a baking sheet 3 minutes per side or until golden.
- Brush tops with oil; sprinkle cheese over slices, and sprinkle with pepper.
- Bake 1 to 2 minutes or until cheese is melted.
