Slow Cooker 15-Bean Soup

Ingredients

  • ½ (20-oz) pkg 15-bean soup mix (see Note)
  • 1 (28-oz) can no-salt-added fire-roasted diced tomatoes
  • 1 (32-oz) carton low-sodium vegetable broth
  • 1 (8-oz) pkg diced trinity mix (green bell pepper, onion, and celery)
  • 1 large carrot, chopped
  • 1½ Tbsp bottled minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • ½ Tbsp Italian seasoning
  • 4 slices center-cut bacon, cooked and coarsely crumbled

Instructions

  1. Discard seasoning packet from beans.
  2. Rinse, drain, and transfer beans to a 5-quart slow cooker.
  3. Top with tomatoes and remaining ingredients, except bacon.
  4. Cover and cook on LOW 10 hours or until beans are tender.
  5. Garnish with bacon.

Side Dish Ingredients

  • 1 (4-oz) whole wheat hoagie roll, cut into ½-inch slices
  • 1 Tbsp olive oil
  • ¼ cup shredded Gruyère cheese
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Toast bread slices on a baking sheet 3 minutes per side or until golden.
  3. Brush tops with oil; sprinkle cheese over slices, and sprinkle with pepper.
  4. Bake 1 to 2 minutes or until cheese is melted.
