Creamy Popcorn Soup
Grape and Apple Salad
Ingredients
- 3 Tbsp butter
- ½ cup chopped sweet onion
- 2 cloves garlic, minced
- ½ (32-oz) pkg frozen cubed hash browns
- 3 cups popped popcorn, divided
- 1 (32-oz) carton chicken broth
- 1 cup frozen corn
- ½ cup shredded Parmesan cheese
Instructions
- Melt 2 Tbsp butter in a saucepan over medium heat; add onion and garlic and cook 5 minutes.
- Stir in hash browns and 1½ cups popcorn; cook 1 minute.
- Stir in broth; cover, reduce heat, and simmer 30 minutes.
- Let cool 10 minutes.
- Spoon soup into a blender; remove center piece from blender to allow steam to escape and cover hole with a clean dish towel.
- Process soup until smooth; return to pot.
- Add corn, and cook 10 minutes.
- Stir in cheese.
- Melt remaining 1 Tbsp butter in a bowl; add 2 cups popcorn, tossing to coat.
- Spoon soup into bowls, and top with popcorn.
Side Dish Ingredients
- ½ lb seedless grapes
- 1 apple, chopped
- 1 Tbsp honey
- ½ lemon
Side Dish Instructions
- Cut grapes in half if desired; toss with chopped apple, honey and juice of ½ lemon.
