Green Chile Chicken Soup

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cubed
  • 1 onion, chopped
  • 2 zucchini, halved lengthwise and sliced
  • 3 carrots, chopped
  • ½ head green cabbage, chopped
  • 2 (48-oz) cartons chicken broth
  • 1 (28-oz) can fire-roasted crushed tomatoes
  • 1 (20-oz) can diced tomatoes and green chiles
  • ½ cup chopped fresh cilantro
  • 2 Tbsp ground cumin
  • ½ tsp salt
  • 1 Tbsp fresh lime juice

Instructions

  1. Bring all ingredients except lime juice to a boil in a large Dutch oven over medium-high heat.
  2. Reduce heat, and simmer 30 minutes or until cabbage is tender.
  3. Stir in lime juice before serving.
