Green Chile Chicken Soup
Ingredients
- 1½ lb boneless, skinless chicken breasts, cubed
- 1 onion, chopped
- 2 zucchini, halved lengthwise and sliced
- 3 carrots, chopped
- ½ head green cabbage, chopped
- 2 (48-oz) cartons chicken broth
- 1 (28-oz) can fire-roasted crushed tomatoes
- 1 (20-oz) can diced tomatoes and green chiles
- ½ cup chopped fresh cilantro
- 2 Tbsp ground cumin
- ½ tsp salt
- 1 Tbsp fresh lime juice
Instructions
- Bring all ingredients except lime juice to a boil in a large Dutch oven over medium-high heat.
- Reduce heat, and simmer 30 minutes or until cabbage is tender.
- Stir in lime juice before serving.
