Loaded Waffle Fries

Ingredients

  • 1 (22-oz) pkg frozen waffle fries
  • 1½ lb ground beef
  • 1 (1.0-oz) pkg taco seasoning mix
  • ¼ cup water
  • 1 (8-oz) pkg shredded Mexican blend cheese
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) container refrigerated guacamole
  • ¼ cup chopped fresh cilantro
  • 1 (16-oz) container refrigerated salsa

Instructions

  1. Preheat oven to 450°F.
  2. Arrange fries in a single layer on a greased rimmed baking sheet.
  3. Bake 15 to 20 minutes or until golden brown and crisp; season with salt and pepper.
  4. Meanwhile, cook ground beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  5. Stir in taco seasoning mix and water; bring to a boil, reduce heat, and simmer 5 minutes or until very thick.
  6. Spoon meat mixture over fries; sprinkle with cheese.
  7. Return fries to oven; bake 5 minutes longer or until cheese is melted.
  8. If desired, top with sour cream, guacamole, cilantro and salsa.
  9. Serve loaded fries with Ranch dressing, queso dip or ketchup.

Side Dish Ingredients

  • 2 Braeburn or Fuji apples, finely chopped
  • ¼ cup chopped celery
  • ¼ cup raisins (or dried cranberries)
  • 2 Tbsp mayonnaise
  • 1 Tbsp lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Combine apples, celery and raisins in a bowl.
  2. Mix mayonnaise, lemon juice and honey in a small bowl; add to fruit, and toss.
  3. Chill until ready to serve.
