Creamy Vegetable Korma

Ingredients

  • 2 Tbsp olive oil
  • 1 (16-oz) pkg cubed butternut squash
  • 1 (8-oz) pkg chopped onion
  • 1 (15-oz) pkg frozen cauliflower florets
  • 2 (15-oz) cans no-salt-added chickpeas
  • 3 (10-oz) pouches Vegetable Korma (such as Tasty Bite) 
  • 1 cup vegetable broth
  • ½ cup 2% reduced-fat Greek yogurt

Instructions

  1. Heat oil in a Dutch oven over medium-high heat. Add squash and onion; sauté 5 minutes. Add cauliflower, chickpeas, Korma and broth; simmer 10 minutes or until vegetables are tender.
  2. Serve with yogurt over rice.

Side Dish Ingredients

  •  2 (8.8-oz) pouches microwavable brown basmati rice
  • ⅓ cup sliced almonds

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Toast almonds in a dry skillet over medium heat 2 to 3 minutes or until fragrant and browned. Sprinkle over rice.
