Creamy Vegetable Korma
Almond Basmati RiceIngredients
- 2 Tbsp olive oil
- 1 (16-oz) pkg cubed butternut squash
- 1 (8-oz) pkg chopped onion
- 1 (15-oz) pkg frozen cauliflower florets
- 2 (15-oz) cans no-salt-added chickpeas
- 3 (10-oz) pouches Vegetable Korma (such as Tasty Bite)
- 1 cup vegetable broth
- ½ cup 2% reduced-fat Greek yogurt
Instructions
- Heat oil in a Dutch oven over medium-high heat. Add squash and onion; sauté 5 minutes. Add cauliflower, chickpeas, Korma and broth; simmer 10 minutes or until vegetables are tender.
- Serve with yogurt over rice.

- 2 (8.8-oz) pouches microwavable brown basmati rice
- ⅓ cup sliced almonds
Side Dish Instructions
- Cook rice according to package directions.
- Toast almonds in a dry skillet over medium heat 2 to 3 minutes or until fragrant and browned. Sprinkle over rice.
