Chicken and Chickpea Caesar Salad

Ingredients

  • 2 (8.8-oz) pkg Caesar Salad kits (such as Dole)
  • 1 (5-oz) pkg baby kale
  • 3 cups shredded rotisserie chicken (without skin)
  • 1 (15-oz) can no-salt-added chickpeas, rinsed and drained
  • ⅓ cup freshly grated Parmesan cheese
  • ⅓ cup roasted, salted sunflower seeds

Instructions

  1. Prepare salad kit according to package directions; set aside dressing packets.
  2. Add kale, chicken, chickpeas, cheese and seeds; toss. Drizzle with reserved dressing; toss to coat.

  • 6 vine-ripened tomatoes
  • 2 Tbsp olive oil
  • ½ Tbsp red wine vinegar
  • ½ Tbsp bottled minced garlic
  • ½ cup chopped fresh basil
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Slice tomatoes, and place in a large bowl. Whisk together oil, vinegar, garlic, basil and salt. Pour over tomatoes, toss gently, and let stand 10 minutes.
