Chicken and Chickpea Caesar Salad
Marinated TomatoesIngredients
- 2 (8.8-oz) pkg Caesar Salad kits (such as Dole)
- 1 (5-oz) pkg baby kale
- 3 cups shredded rotisserie chicken (without skin)
- 1 (15-oz) can no-salt-added chickpeas, rinsed and drained
- ⅓ cup freshly grated Parmesan cheese
- ⅓ cup roasted, salted sunflower seeds
Instructions
- Prepare salad kit according to package directions; set aside dressing packets.
- Add kale, chicken, chickpeas, cheese and seeds; toss. Drizzle with reserved dressing; toss to coat.
Side Dish Ingredients
- 6 vine-ripened tomatoes
- 2 Tbsp olive oil
- ½ Tbsp red wine vinegar
- ½ Tbsp bottled minced garlic
- ½ cup chopped fresh basil
- ¼ tsp kosher salt
Side Dish Instructions
- Slice tomatoes, and place in a large bowl. Whisk together oil, vinegar, garlic, basil and salt. Pour over tomatoes, toss gently, and let stand 10 minutes.
