Gefilte Fish Pate

Ingredients

  • 3 Tbsp vegetable oil
  • 4 sweet onions, chopped
  • 1½ lb flounder, ground
  • 1½ lb salmon, ground
  • 2 cups cold water
  • 4 large eggs
  • 6 Tbsp matzo meal
  • 2 Tbsp chopped fresh dill
  • 1 Tbsp chopped fresh tarragon
  • 2 tsp salt
  • 1½ tsp pepper
  • 2 cups grated carrot
  • Matzo meal crackers, prepared horseradish, fresh parsley (for serving)

Instructions

  1. Heat oil in a large skillet over medium heat; add onions, and cook, stirring often, 10 minutes or until very tender. Remove from heat, and cool 15 minutes.
  2. Preheat oven to 325°F. Combine onions, fish, cold water, eggs, matzo meal, dill, tarragon, salt, and pepper in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed 15 minutes.
  3. Stir in grated carrot. Spoon mixture into a greased 10-to 12-cup Bundt pan or 2 (9- x 5-inch) loaf pans.
  4. Place pan in a large roasting pan filled with enough water to come 2 inches up sides of Bundt pan.
  5. Bake 1 hour; cover with foil, and bake 1 hour longer or until center is firm. Cool in pan 10 minutes. Invert onto a platter; chill at least 4 hours or up to 3 days. Serve with crackers, horseradish, and parsley.
