Broiled Greek Flounder
Spinach, Arugula and Orange SaladIngredients
- 2 (6-oz) flounder fillets (or use grouper)
- 1 cup grape tomatoes
- ¼ cup pitted kalamata olives, cut in half
- 2 Tbsp olive oil
- 1½ tsp Greek seasoning
Instructions
- Preheat broiler. Place fish, tomatoes and olives on a greased baking sheet. Combine oil and Greek seasoning; rub over fish. Sprinkle lightly with salt and pepper.
- Broil fish 4 minutes per side or until fish flakes with a fork.
Side Dish Ingredients
- 1 Tbsp apple cider vinegar
- ½ Tbsp Dijon mustard
- 2 Tbsp olive oil
- ½ (5-oz) pkg arugula-baby spinach mix
- 1 orange, peeled and sectioned
- ⅓ cup thinly sliced red onion
Side Dish Instructions
- Whisk together vinegar and mustard in a bowl; gradually whisk in oil. Add salad mix, orange, onion and salt and pepper to taste, and toss.
