Broiled Greek Flounder

Spinach, Arugula and Orange Salad

Ingredients

  • 2 (6-oz) flounder fillets (or use grouper)
  • 1 cup grape tomatoes
  • ¼ cup pitted kalamata olives, cut in half
  • 2 Tbsp olive oil
  • 1½ tsp Greek seasoning

Instructions

  1. Preheat broiler. Place fish, tomatoes and olives on a greased baking sheet. Combine oil and Greek seasoning; rub over fish. Sprinkle lightly with salt and pepper.
  2. Broil fish 4 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • 1 Tbsp apple cider vinegar
  • ½ Tbsp Dijon mustard
  • 2 Tbsp olive oil
  • ½ (5-oz) pkg arugula-baby spinach mix
  • 1 orange, peeled and sectioned
  • ⅓ cup thinly sliced red onion

Side Dish Instructions

  1. Whisk together vinegar and mustard in a bowl; gradually whisk in oil. Add salad mix, orange, onion and salt and pepper to taste, and toss.
