Seared Hawaiian Tuna Poke

Sesame Brown Rice with Kale

Ingredients

  • ½ lb tuna steaks
  • ½ Tbsp olive oil
  • 1 Tbsp low-sodium soy sauce
  • ½ Tbsp rice vinegar
  • ½ tsp Sriracha hot sauce
  • ½ tsp refrigerated minced ginger
  • 1 small avocado, pitted and diced
  • ½ cup seedless cucumber, thinly sliced

Instructions

  1. Sear fish in hot oil in a large skillet over high heat 1 to 2 minutes per side. Let stand 1 to 2 minutes; cut into large cubes.
  2. Combine soy sauce, vinegar, Sriracha and ginger in a large bowl. Add tuna, avocado and cucumber; toss. Serve over brown rice.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • 1 cup very thinly sliced lacinato kale, stemmed
  • 1 tsp sesame seeds
  • 1 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Heat rice according to package directions. Stir in kale, sesame seeds and soy sauce.
