Quick Chicken Posole

Ingredients

  • 2 zucchini, coarsely chopped 
  • 1½ cups chopped onion
  • 1 Tbsp olive oil
  • 1 tsp ground cumin
  • ¾ cup mild salsa verde
  • 6 cups gluten-free chicken broth
  • 1 (29-oz) can hominy, drained and rinsed
  • 3 cups shredded rotisserie chicken

Instructions

  1. Sauté zucchini and onion in hot oil in a large Dutch oven over medium heat 5 minutes. Add cumin, salsa, broth and hominy; simmer 15 minutes.
  2. Stir in chicken; simmer 3 to 4 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 (5-oz) pkg mixed baby greens
  • 1 avocado, pitted and cubed
  • ½ cup roasted, salted sunflower kernels 
  • ⅓ cup crumbled feta cheese
  • ⅓ cup mango chipotle vinaigrette (such as Kraft)

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
