Eggs in Spiraled Sweet Potato Nests

Ingredients

  • 2 large sweet potatoes
  • 8 slices nitrite-free bacon
  • 1 clove garlic, minced
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 8 large eggs
  • 1 tomato, chopped

Instructions

  1. Use a spiralizer to cut each sweet potato into noodle-shaped strands.
  2. Or cut sweet potatoes lengthwise into ¼-inch-thick slices, stack 3 slices at a time, and cut lengthwise into thin strips to resemble noodles.
  3. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Remove bacon from skillet; crumble, reserving 2 Tbsp drippings in pan.
  4. Add sweet potato strands, garlic, thyme, salt and pepper; gently stir to combine.
  5. Make 8 indentations in sweet potato mixture (shaping into nests); crack 1 egg into each indentation. Cover and cook 6 minutes or until egg whites are firm and set. Sprinkle with bacon and tomato.
