Eggs in Spiraled Sweet Potato Nests
Ingredients
- 2 large sweet potatoes
- 8 slices nitrite-free bacon
- 1 clove garlic, minced
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp pepper
- 8 large eggs
- 1 tomato, chopped
Instructions
- Use a spiralizer to cut each sweet potato into noodle-shaped strands.
- Or cut sweet potatoes lengthwise into ¼-inch-thick slices, stack 3 slices at a time, and cut lengthwise into thin strips to resemble noodles.
- Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Remove bacon from skillet; crumble, reserving 2 Tbsp drippings in pan.
- Add sweet potato strands, garlic, thyme, salt and pepper; gently stir to combine.
- Make 8 indentations in sweet potato mixture (shaping into nests); crack 1 egg into each indentation. Cover and cook 6 minutes or until egg whites are firm and set. Sprinkle with bacon and tomato.
