Coconut, Walnut and Cranberry Breakfast Bites

Ingredients

  • 4 pitted dates
  • 1½ cups raw walnut halves
  • 2 Tbsp coconut oil, melted
  • ½ cup unsweetened dried cranberries (such as Natural Healing House), coarsely chopped
  • ½ cup unsweetened shredded coconut, divided
  • ½ tsp grated orange rind

Instructions

  1. Process dates in a food processor until a paste forms and dates clump together. Add walnuts; blend until chopped.
  2. With processor running, slowly drizzle in oil until blended, scraping down sides as needed.
  3. Combine date mixture, cranberries, ¼ cup coconut and orange rind. Shape mixture into 12 balls; roll in ¼ cup coconut.
