Coconut, Walnut and Cranberry Breakfast Bites
Ingredients
- 4 pitted dates
- 1½ cups raw walnut halves
- 2 Tbsp coconut oil, melted
- ½ cup unsweetened dried cranberries (such as Natural Healing House), coarsely chopped
- ½ cup unsweetened shredded coconut, divided
- ½ tsp grated orange rind
Instructions
- Process dates in a food processor until a paste forms and dates clump together. Add walnuts; blend until chopped.
- With processor running, slowly drizzle in oil until blended, scraping down sides as needed.
- Combine date mixture, cranberries, ¼ cup coconut and orange rind. Shape mixture into 12 balls; roll in ¼ cup coconut.
