Broccoli-Quinoa Skillet with Chicken

Ingredients

  • 1½ cups chopped onion
  • 2 Tbsp olive oil
  • 1½ lb chicken breast tenders, cut into bite-size pieces
  • 1 cup quinoa
  • 2½ cups low-sodium chicken broth
  • 2 (10-oz) pkg frozen chopped broccoli
  • 1 tsp kosher salt
  • ½ tsp pepper
  • ¾ cup 2% reduced-fat plain Greek yogurt
  • 1¼ cups shredded 2% reduced-fat sharp Cheddar cheese

Instructions

  1. Sauté onion in hot oil in a large cast-iron skillet or Dutch oven over medium heat 2 minutes. Add chicken; sauté 3 minutes.
  2. Add quinoa and broth; bring to a boil. Cover, reduce heat, and cook 12 minutes.
  3. Stir in broccoli, salt, and pepper; cook 5 minutes or until broccoli is tender. Remove from heat. Stir in yogurt and ¾ cup cheese. Sprinkle with ½ cup cheese.
  4. Preheat broiler. Broil 2 to 3 minutes or until cheese is melted and bubbly.
