Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 tsp whole-grain mustard
  • 2 tsp honey
  • 1 (5-oz) pkg baby arugula
  • 8 slices bacon, cooked and crumbled
  • 6 ears corn, shucked and kernels removed
  • 1 red bell pepper, chopped
  • 1 pint grape tomatoes, halved
  • 2 (3.5-oz) pkg honey roasted pecan pieces

Instructions

  1. Whisk together oil, lemon juice, mustard, and honey in a large bowl; add arugula, bacon, corn, bell pepper, tomatoes, and pecans.
  2. Toss, and serve immediately.
