Creamy Avocado Alfredo

Ingredients

  • ½ (13.25-oz) pkg whole-grain linguine (such as Barilla)
  • 1 large avocado, pitted and coarsely chopped
  • 1½ Tbsp lemon juice
  • 1 clove garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Process avocado, lemon juice, garlic, salt and pepper in a food processor until smooth.
  3. Cook avocado mixture, pasta, and pasta water, if needed, in a Dutch oven over medium heat 3 to 4 minutes. Sprinkle with cheese.

Side Dish Ingredients

  • 1 pint organic grape tomatoes
  • 1 Tbsp olive oil
  • 3 Tbsp organic pesto

Side Dish Instructions

  1. Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst.
  2. Transfer to a bowl. Toss with pesto.
