Creamy Avocado Alfredo
Pesto-Tomato TossIngredients
- ½ (13.25-oz) pkg whole-grain linguine (such as Barilla)
- 1 large avocado, pitted and coarsely chopped
- 1½ Tbsp lemon juice
- 1 clove garlic
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Process avocado, lemon juice, garlic, salt and pepper in a food processor until smooth.
- Cook avocado mixture, pasta, and pasta water, if needed, in a Dutch oven over medium heat 3 to 4 minutes. Sprinkle with cheese.
Side Dish Ingredients
- 1 pint organic grape tomatoes
- 1 Tbsp olive oil
- 3 Tbsp organic pesto
Side Dish Instructions
- Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst.
- Transfer to a bowl. Toss with pesto.
