Zucchini Shrimp Scampi

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 2 Tbsp jarred minced garlic
  • ¾ cup dry white wine
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 2 lb peeled and deveined, large wild-caught raw shrimp
  • 1½ lb zucchini spirals
  • 2 Tbsp fresh lemon juice
  • ¼ cup chopped fresh parsley

Instructions

  1. Melt butter with oil in a large skillet over medium heat. Add garlic; sauté 1 minute.
  2. Add wine, salt, and pepper; bring to a simmer.  Cook 2 minutes or until reduced by half. Add shrimp; cook 2 to 3 minutes or until shrimp turn pink.
  3. Stir in zucchini, lemon juice, and parsley.

Side Dish Ingredients

  • 1 (8-oz) Italian five-grain baguette, cut into 12 slices
  • 2 Tbsp olive oil
  • 4 oz fresh mozzarella cheese, thinly sliced
  • ½ cup fresh basil leaves
  • 3 large heirloom tomatoes, sliced
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Preheat broiler. Arrange bread on a large baking sheet; brush with oil.
  2. Broil 1 to 2 minutes or until toasted. Top with cheese; broil 1 minute or until cheese is bubbly.
  3. Top with basil, tomatoes, salt, and pepper. Drizzle with vinegar.
