Summer Melon Salad

Ingredients

  • 4 cups cubed seedless watermelon
  • 4 cups cubed cantaloupe
  • ¼ cup fresh mint leaves
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp extra virgin olive oil
  • ½ tsp kosher salt
  • 1 (5-oz) pkg baby arugula
  • 1 (3-oz) pkg candied walnuts
  • 1 (3-oz) pkg thinly sliced prosciutto

Instructions

  1. Toss together watermelon, cantaloupe, mint, lemon juice, oil, and salt in a large bowl.
  2. Arrange arugula on a platter; top with melon mixture. Sprinkle with walnuts; top with prosciutto.

Side Dish Ingredients

  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced or torn into pieces
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp basil paste
  • 2 cloves garlic, thinly sliced
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl. Let stand 20 minutes.
