Summer Melon Salad
Marinated MozzarellaIngredients
- 4 cups cubed seedless watermelon
- 4 cups cubed cantaloupe
- ¼ cup fresh mint leaves
- 3 Tbsp fresh lemon juice
- 2 Tbsp extra virgin olive oil
- ½ tsp kosher salt
- 1 (5-oz) pkg baby arugula
- 1 (3-oz) pkg candied walnuts
- 1 (3-oz) pkg thinly sliced prosciutto
Instructions
- Toss together watermelon, cantaloupe, mint, lemon juice, oil, and salt in a large bowl.
- Arrange arugula on a platter; top with melon mixture. Sprinkle with walnuts; top with prosciutto.
Side Dish Ingredients
- 1 (8-oz) ball fresh mozzarella cheese, thinly sliced or torn into pieces
- 2 Tbsp extra virgin olive oil
- 1 Tbsp basil paste
- 2 cloves garlic, thinly sliced
- ¼ tsp crushed red pepper
Side Dish Instructions
- Combine all ingredients in a bowl. Let stand 20 minutes.
