Sheet Pan Honey-Garlic Shrimp with Broccoli and Peppers

Ingredients

  • ⅓ cup raw honey
  • ¼ cup coconut aminos soy-free sauce
  • 2 Tbsp avocado oil
  • 4 cloves garlic, minced
  • 1 Tbsp grated ginger
  • ¼ tsp crushed red pepper
  • 1 large head broccoli, cut into florets
  • 2 large red bell peppers, sliced
  • 2 lb peeled and deveined, large wild-caught raw shrimp
  • 2 Tbsp chopped fresh cilantro
  • 2 limes, cut into wedges

Instructions

  1. Preheat oven to 450°F. Stir together honey, coconut aminos, oil, garlic, ginger, and crushed red pepper.
  2. Toss together broccoli, bell peppers, and half of honey mixture in a bowl. Toss together shrimp and remaining half of honey mixture in a second bowl.
  3. Spread broccoli mixture in a single layer on one end of a large foil-lined rimmed baking sheet. Bake 10 minutes.
  4. Stir broccoli mixture. Arrange shrimp in a single layer on opposite end of pan. Bake 5 to 7 minutes or just until shrimp turn pink.
  5. Sprinkle with cilantro and salt and black pepper to taste. Serve with lime wedges.
