Lemon-Garlic Pasta

Ingredients

  • 6 oz uncooked whole wheat spaghetti
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 2 Tbsp pine nuts
  • ¼ cup freshly grated Parmesan cheese
  • 1 Tbsp fresh lemon juice
  • ⅓ cup thinly sliced fresh basil

Instructions

  1. Cook pasta according to package directions; drain.
  2. Heat oil in a small skillet over medium-high heat; add garlic, and sauté just until garlic begins to brown. Add pine nuts; cook 2 minutes or until lightly browned, stirring frequently.
  3. Combine pasta, garlic, pine nuts, Parmesan cheese, lemon juice, and basil in large bowl; toss to coat.

  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 (5-oz) pkg baby spinach
  • 2 Tbsp balsamic vinegar
  • ¼ tsp kosher salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium heat. Add garlic and spinach; cook 6 minutes, stirring frequently. Stir in balsamic vinegar, salt and crushed red pepper.
