Lemon-Garlic Pasta
Balsamic Wilted SpinachIngredients
- 6 oz uncooked whole wheat spaghetti
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 2 Tbsp pine nuts
- ¼ cup freshly grated Parmesan cheese
- 1 Tbsp fresh lemon juice
- ⅓ cup thinly sliced fresh basil
Instructions
- Cook pasta according to package directions; drain.
- Heat oil in a small skillet over medium-high heat; add garlic, and sauté just until garlic begins to brown. Add pine nuts; cook 2 minutes or until lightly browned, stirring frequently.
- Combine pasta, garlic, pine nuts, Parmesan cheese, lemon juice, and basil in large bowl; toss to coat.

- 2 Tbsp balsamic vinegar
- ¼ tsp kosher salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Heat oil in a large skillet over medium heat. Add garlic and spinach; cook 6 minutes, stirring frequently. Stir in balsamic vinegar, salt and crushed red pepper.
