Sheet Pan Chicken Souvlaki and Potatoes

Ingredients

  • 2 lb chicken cutlets
  • 1 (22-oz) pkg frozen red potato wedges with olive oil and garlic (such as Alexia)
  • 2 red bell peppers, cut into strips
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • ½ Tbsp Greek seasoning
  • 1 lemon, thinly sliced
  • ½ cup crumbled reduced-fat feta cheese
  • ½ cup pitted kalamata olives

Instructions

  1. Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
  2. Toss together chicken, potatoes, bell peppers, oil, lemon juice, and seasoning in a bowl. Arrange in an even layer on preheated pan. Top with lemon slices.
  3. Bake 20 to 25 minutes or until chicken is done and potatoes are golden. Sprinkle with cheese and olives.

Side Dish Ingredients

  • 2 seedless cucumbers
  • ½ tsp salt
  • ⅔ cup 2% reduced-fat plain Greek yogurt
  • 3 cloves garlic, minced
  • ½ tsp pepper

Side Dish Instructions

  1. Cut cucumbers into half-moon slices. Sprinkle with salt; let stand 10 minutes. Pat dry.
  2. Combine yogurt, garlic, and pepper; add cucumbers. Toss.
