Grilled Chicken with White Barbecue Sauce

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ⅓ cup organic olive oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 2 Tbsp white vinegar
  • 1 Tbsp fresh lemon juice
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat grill to medium-high heat. Rub chicken with paprika, salt, and black pepper.
  2. Grill on a grill rack rubbed with oil, covered with grill lid, 7 to 8 minutes per side or until done.
  3. Stir together mayonnaise, vinegar, lemon juice, and cayenne pepper. Serve with chicken.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen cauliflower florets
  • 2 Tbsp coconut oil, melted
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet. Bake 20 minutes or until lightly browned and tender, stirring once.
