Grilled Pizza with Prosciutto, Watermelon, and Arugula

Ingredients

  • 1 large red onion, cut into ½-inch rings
  • ¼ cup olive oil, divided
  • 1 (15-oz) pkg already-rolled-out bakery pizza dough (see Note)
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • 3 cups baby arugula
  • 2 Tbsp fresh lemon juice
  • 2 cups cubed watermelon
  • 1 (3-oz) pkg thinly sliced prosciutto (or use chopped cooked bacon)
  • ¼ tsp pepper

Instructions

  1. Preheat grill to medium-high heat. Brush onion with 1 Tbsp oil.
  2. Roll dough into a 15-inch rectangle (about ¼-inch thick). Brush with 1 Tbsp oil.
  3. Grill onion and dough, oiled sides down and covered, 3 to 4 minutes or until onion is charred and dough is bubbly and bottom is browned. Remove onion from grill.
  4. Brush top of dough with 1 Tbsp oil; turn dough over, and top with cheese. Grill, covered, 5 to 6 minutes or until cheese is melted and crust is browned.
  5. Coarsely chop onion. Toss together onion, arugula, 1 Tbsp oil, and lemon juice. Top pizza with arugula mixture, watermelon, prosciutto, and pepper.
