Bacon-Turkey Meatloaf
Greek Roasted Spaghetti SquashIngredients
- 6 slices bacon
- 1½ lb ground turkey
- ½ medium onion, chopped
- 2 Tbsp tomato paste
- 2 Tbsp almond flour
- 2 large eggs, lightly beaten
- 1 Tbsp poultry seasoning
- ½ tsp salt
- ½ tsp pepper
- Coconut oil cooking spray
Instructions
- Preheat oven to 425°F.
- Place bacon on a paper towel-lined plate; microwave on High 2 minutes or until crisp. Crumble.
- Combine ground turkey, onion, tomato paste, almond flour, eggs, seasoning, salt and pepper in a large bowl.
- Mix until just combined; stir in bacon. Transfer to a lightly greased loaf pan.
- Bake 50 to 55 minutes or until a meat thermometer reads 165°F, covering loaf with foil, if needed. Let cool; slice to serve.
Side Dish Ingredients
- 2 large spaghetti squash, cut in half lengthwise
- 4 cloves garlic, minced
- 3 Tbsp coconut oil, melted (or use avocado oil)
- 1 Tbsp Greek seasoning
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F.
- Scoop out and discard seeds from squash.
- Place squash, cut sides up, on a rimmed baking sheet; rub with garlic, oil, seasoning and pepper.
- Roast 30 minutes or until squash is almost tender. Turn and roast 10 to 15 minutes longer.
- Let cool slightly, then shred with 2 forks into spaghetti-like strands.
