Bacon-Turkey Meatloaf

Ingredients

  • 6 slices bacon
  • 1½ lb ground turkey
  • ½ medium onion, chopped
  • 2 Tbsp tomato paste
  • 2 Tbsp almond flour
  • 2 large eggs, lightly beaten
  • 1 Tbsp poultry seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • Coconut oil cooking spray

Instructions

  1. Preheat oven to 425°F.
  2. Place bacon on a paper towel-lined plate; microwave on High 2 minutes or until crisp. Crumble.
  3. Combine ground turkey, onion, tomato paste, almond flour, eggs, seasoning, salt and pepper in a large bowl.
  4. Mix until just combined; stir in bacon. Transfer to a lightly greased loaf pan.
  5. Bake 50 to 55 minutes or until a meat thermometer reads 165°F, covering loaf with foil, if needed. Let cool; slice to serve.

Side Dish Ingredients

  • 2 large spaghetti squash, cut in half lengthwise
  • 4 cloves garlic, minced
  • 3 Tbsp coconut oil, melted (or use avocado oil)
  • 1 Tbsp Greek seasoning
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Scoop out and discard seeds from squash.
  3. Place squash, cut sides up, on a rimmed baking sheet; rub with garlic, oil, seasoning and pepper.
  4. Roast 30 minutes or until squash is almost tender. Turn and roast 10 to 15 minutes longer.
  5. Let cool slightly, then shred with 2 forks into spaghetti-like strands.
