Almond-Crusted Fish

Sweet and Tangy Slaw

Ingredients

  • 6 (6-oz) halibut fillets
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 large eggs, lightly beaten
  • 1 cup almond meal
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 450°F. Sprinkle fish with salt and pepper.
  2. Place eggs in a shallow dish. Place almond meal in a second dish. Dip fish in egg, and dredge in almond meal. Transfer to a baking sheet brushed with oil.
  3. Bake 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 Tbsp raw honey
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp dried thyme
  • ½ tsp salt
  • 1 (16-oz) pkg tricolor coleslaw
  • ¼ cup chopped flat-leaf parsley

Side Dish Instructions

  1. Whisk together honey, oil, vinegar, mustard, thyme, and salt in a large bowl. Add coleslaw and parsley; toss.
