Honey-Thyme Lemonade

Ingredients

  • 3 Tbsp honey
  • 1¼ cups sugar
  • 8 cups water, divided
  • 6 sprigs fresh thyme (optional)
  • 1½ cups fresh lemon juice
  • 1 lemon, thinly sliced

Instructions

  1. Combine honey, sugar, 2 cups water, and thyme in a medium saucepan; bring to a boil, reduce heat, and simmer until sugar is dissolved.
  2. Let cool 30 minutes; strain mixture, discarding thyme. Cover, and refrigerate at least 4 hours.
  3. Combine sugar mixture, lemon juice, 6 cups water, and sliced lemon in a large pitcher, stir. Serve over ice.
