Summer Gazpacho

Shrimp, Feta, and Basil Relish

Ingredients

  • ½ seedless cucumber, cut into chunks
  • 1 small red bell pepper, cut into chunks
  • 1 large heirloom tomato, quartered
  • ½ cup coarsely chopped red onion
  • 1 clove garlic, minced
  • 1⅓ cups tomato juice
  • 4 tsp white wine vinegar
  • 4 tsp olive oil

Instructions

  1. Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a bowl or pitcher. Stir in juice, vinegar, and oil; season with salt and pepper to taste. Divide between 2 bowls.

Side Dish Ingredients

  • ½ lb peeled and deveined, large cooked shrimp
  • ¼ cup thinly sliced fresh basil
  • 1 cup grape tomatoes, halved
  • 2 Tbsp crumbled feta cheese
  • 2 tsp olive oil

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Season with salt and pepper to taste.
