White Pizzas with Chicken, Spinach, and Grapes
Apple and Celery SaladIngredients
- 2 (12-inch) prebaked whole wheat pizza crusts
- 3 cloves garlic, finely minced
- ¼ cup olive oil, divided
- 2 (8-oz) balls fresh mozzarella cheese, sliced
- 3 cups shredded rotisserie chicken
- 4 cups baby spinach
- 2 cups seedless red grapes, halved
- ½ cup thinly sliced red onion
- 2 Tbsp fresh lemon juice
- 1 tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Place each crust on a foil-lined baking sheet. Stir together garlic and 2 Tbsp oil; brush over crusts, and top with cheese.
- Bake 12 minutes or until cheese is melted, rotating pans after 6 minutes. Blot any excess liquid from cheese with paper towels, if necessary.
- Toss together chicken, spinach, grapes, onion, lemon juice, and 2 Tbsp oil; divide between crusts.
- Bake 5 minutes or until spinach is wilted; sprinkle with salt and pepper.
Side Dish Ingredients
- 2 cups thinly sliced celery
- 1 cup fresh flat-leaf parsley leaves
- ½ cup thinly sliced red onion
- 3 Tbsp olive oil
- 2 sweet, crisp apples, sliced
- 2 Tbsp fresh lemon juice
- ½ cup crumbled goat cheese (or use feta)
Side Dish Instructions
- Toss together celery, parsley, onion, and oil.
- Toss apples with lemon juice, and add to salad. Season with salt and pepper to taste; toss. Top with cheese.
