White Pizzas with Chicken, Spinach, and Grapes

Ingredients

  • 2 (12-inch) prebaked whole wheat pizza crusts
  • 3 cloves garlic, finely minced
  • ¼ cup olive oil, divided
  • 2 (8-oz) balls fresh mozzarella cheese, sliced
  • 3 cups shredded rotisserie chicken
  • 4 cups baby spinach
  • 2 cups seedless red grapes, halved
  • ½ cup thinly sliced red onion
  • 2 Tbsp fresh lemon juice
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Place each crust on a foil-lined baking sheet. Stir together garlic and 2 Tbsp oil; brush over crusts, and top with cheese.
  2. Bake 12 minutes or until cheese is melted, rotating pans after 6 minutes. Blot any excess liquid from cheese with paper towels, if necessary.
  3. Toss together chicken, spinach, grapes, onion, lemon juice, and 2 Tbsp oil; divide between crusts.
  4. Bake 5 minutes or until spinach is wilted; sprinkle with salt and pepper.

Side Dish Ingredients

  • 2 cups thinly sliced celery
  • 1 cup fresh flat-leaf parsley leaves
  • ½ cup thinly sliced red onion
  • 3 Tbsp olive oil
  • 2 sweet, crisp apples, sliced
  • 2 Tbsp fresh lemon juice
  • ½ cup crumbled goat cheese (or use feta)

Side Dish Instructions

  1. Toss together celery, parsley, onion, and oil.
  2. Toss apples with lemon juice, and add to salad. Season with salt and pepper to taste; toss. Top with cheese.
