Sheet Pan Spinach-and-Pine-Nut Pizza
Roasted PineappleIngredients
- 1 (1-lb) ball bakery whole wheat pizza dough
- ⅓ cup roasted garlic marinara sauce
- 1 (5-oz) pkg baby spinach
- ¾ cup very thinly sliced red onion
- 1 (8-oz) ball fresh mozzarella cheese, torn into small pieces
- 2 heirloom tomatoes, seeded and thinly sliced
- ¾ cup shaved Parmesan cheese
- ⅓ cup pine nuts
Instructions
- Preheat oven to 450°F. Let dough stand at room temperature 30 minutes to 1 hour.
- Coat a large rimmed baking sheet with cooking spray. Spread dough to cover entire baking sheet (see Note). Top with remaining ingredients in order of ingredient list.
- Bake 22 to 25 minutes or until crust is crisp and golden brown.
Side Dish Ingredients
- 2 Tbsp brown sugar
- 3 Tbsp fresh orange juice
- ½ Tbsp honey
- ⅛ tsp cayenne pepper
- 3 cups cubed pineapple
Side Dish Instructions
- Preheat oven to 450°F. Stir together sugar, orange juice, honey, and pepper in a bowl. Add pineapple; toss. Spread in a single layer on a foil-lined rimmed baking sheet.
- Bake 10 minutes or until pineapple begins to caramelize.
