Grilled Chicken with White Barbecue Sauce

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved crosswise and pounded to an even thickness
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 3 Tbsp mayonnaise
  • 1 Tbsp white vinegar
  • ½ Tbsp fresh lemon juice
  • ⅛ tsp cayenne pepper

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub chicken with paprika, salt, and black pepper.
  2. Grill on a grill rack rubbed with oil, covered, 7 to 8 minutes per side or until done.
  3. Stir together mayonnaise, vinegar, lemon juice, and cayenne pepper. Serve with chicken.

Side Dish Ingredients

  • 2 sweet potatoes
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 green onions, chopped

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Microwave sweet potatoes at HIGH 6 to 8 minutes or until crisp-tender. Let stand until cool enough to handle (about 15 minutes). Cut lengthwise into wedges. Toss potatoes with garlic and oil.
  2. Grill, covered, 3 minutes per side or until charred and tender. Sprinkle with onions and kosher salt and pepper to taste.
