Barbecue Pork Tostadas

Ingredients

  • 1 (12-oz) container fully cooked sauceless pulled pork (such as Curly's)
  • 1 (8.3-oz) can baked beans with bacon and brown sugar sauce (such as Bush's Best)
  • 6 (0.63-oz) tostada shells (such as Guerrero)
  • 1½ cups shredded Monterey Jack cheese
  • 1 (10.5-oz) pkg barbecue-Ranch chopped salad kit (such as Taylor Farms) 
  • ½ cup thinly sliced red onion

Instructions

  1. Preheat broiler. Heat pork and beans according to package directions. Slightly mash beans.
  2. Arrange tostada shells on a large baking sheet. Spread beans on shells; top with pork and cheese.
  3. Broil 1 to 2 minutes or until cheese is melted and beginning to brown.
  4. Assemble salad kit according to directions; top each tostada with salad and onion.

Side Dish Ingredients

  • 2 pints grape tomatoes
  • 2 green onions, chopped
  • 2 Tbsp extra virgin olive oil
  • 2 tsp apple cider vinegar
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ¼ tsp ground cumin

Side Dish Instructions

  1. Place tomatoes in a large bowl. Add onions, oil, vinegar, salt, pepper, and cumin. Toss; let stand 10 minutes.
