Barbecue Pork Tostadas
Marinated Grape TomatoesIngredients
- 1 (12-oz) container fully cooked sauceless pulled pork (such as Curly's)
- 1 (8.3-oz) can baked beans with bacon and brown sugar sauce (such as Bush's Best)
- 6 (0.63-oz) tostada shells (such as Guerrero)
- 1½ cups shredded Monterey Jack cheese
- 1 (10.5-oz) pkg barbecue-Ranch chopped salad kit (such as Taylor Farms)
- ½ cup thinly sliced red onion
Instructions
- Preheat broiler. Heat pork and beans according to package directions. Slightly mash beans.
- Arrange tostada shells on a large baking sheet. Spread beans on shells; top with pork and cheese.
- Broil 1 to 2 minutes or until cheese is melted and beginning to brown.
- Assemble salad kit according to directions; top each tostada with salad and onion.
Side Dish Ingredients
- 2 pints grape tomatoes
- 2 green onions, chopped
- 2 Tbsp extra virgin olive oil
- 2 tsp apple cider vinegar
- ½ tsp kosher salt
- ¼ tsp pepper
- ¼ tsp ground cumin
Side Dish Instructions
- Place tomatoes in a large bowl. Add onions, oil, vinegar, salt, pepper, and cumin. Toss; let stand 10 minutes.
