Smoky Chicken-and-Sausage Rice Skillet

Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1½ tsp smoked paprika
  • ½ tsp salt
  • 1 (13-oz) pkg smoked turkey sausage links, sliced (such as Butterball)
  • 2 Tbsp olive oil
  • 2 (8-oz) pkg diced tricolor bell pepper mix (such as Incredible Fresh)
  • 1 cup low-sodium chicken broth
  • 1 Tbsp chopped fresh thyme
  • 2 (8.8-oz) pouches microwavable brown rice

Instructions

  1. Sprinkle chicken with paprika and salt. Cook chicken and sausage in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned, stirring occasionally.
  2. Add bell peppers, and cook 2 minutes or until crisp-tender. Stir in broth and thyme. Reduce heat to medium; cover and cook 5 minutes or until vegetables are tender and chicken is done.
  3. Meanwhile, microwave rice according to package directions. Stir rice into chicken mixture until blended.
