Herb-Buttered Egg Noodles

Ingredients

  • 1½ lb boneless chuck roast, trimmed and cut into 2-inch chunks
  • 4 carrots, cut into 2-inch pieces
  • 1 (14.5-oz) can BPA-free diced tomatoes with basil, garlic, and oregano
  • 1 onion, chopped
  • 1 (6-oz) can BPA-free organic tomato paste
  • 2 cloves garlic, minced
  • 1 cup dry red wine
  • ½ cup low-sodium beef broth
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Combine all ingredients in a 5- or 6-quart slow cooker. Cover and cook on LOW 6 to 8 hours or until beef is tender. Serve over Herb-Buttered Egg Noodles recipe.

Side Dish Ingredients

  • 1 (12-oz) pkg whole-grain medium egg noodles
  • 2 Tbsp butter
  • 1 Tbsp chopped fresh thyme (or use 1 tsp dried)

Side Dish Instructions

  1. Cook noodles according to package directions; transfer to a bowl, and toss with butter and thyme.
