Beef Daube

Ingredients
- 1½ lb boneless chuck roast, trimmed and cut into 2-inch chunks
- 4 carrots, cut into 2-inch pieces
- 1 (14.5-oz) can BPA-free diced tomatoes with basil, garlic, and oregano
- 1 onion, chopped
- 1 (6-oz) can BPA-free organic tomato paste
- 2 cloves garlic, minced
- 1 cup dry red wine
- ½ cup low-sodium beef broth
- 1 tsp salt
- 1 tsp pepper
Instructions
- Combine all ingredients in a 5- or 6-quart slow cooker. Cover and cook on LOW 6 to 8 hours or until beef is tender. Serve over Herb-Buttered Egg Noodles recipe.
Side Dish Ingredients
- 1 (12-oz) pkg whole-grain medium egg noodles
- 2 Tbsp butter
- 1 Tbsp chopped fresh thyme (or use 1 tsp dried)
Side Dish Instructions
- Cook noodles according to package directions; transfer to a bowl, and toss with butter and thyme.
