Roasted Vegetable Pizza

Chopped Salad with Sunflower Seeds and Goat Cheese

Ingredients

  • 1 (16-oz) pkg sliced zucchini, squash, and onion medley (see Note)
  • 1 pint grape tomatoes
  • 2 Tbsp olive oil
  • 2 tsp minced garlic
  • 1 (20.28-oz) pkg frozen Italian five-cheese pizza with brick oven crust (such as Freschetta)
  • 2 tsp chopped fresh thyme

Instructions

  1. Preheat oven to 400°F. Combine zucchini medley, tomatoes, oil, and garlic on a large rimmed baking sheet; spread in a single layer. Bake 20 minutes or until browned and tender.
  2. Meanwhile, bake pizza according to package directions.
  3. Spoon vegetable mixture over pizza, and sprinkle with thyme. Cut into squares.

Side Dish Ingredients

  • 1 (13.2-oz) pkg chopped salad kit with sunflower seeds (such as Dole Sunflower Crunch)
  • 1 (5-oz) pkg baby kale
  • ¼ cup crumbled goat cheese
  • ¼ tsp pepper

Side Dish Instructions

  1. Prepare salad kit according to package directions. Add kale; toss.Top with cheese, and sprinkle with pepper.
