Roasted Vegetable Pizza
Chopped Salad with Sunflower Seeds and Goat CheeseIngredients
- 1 (16-oz) pkg sliced zucchini, squash, and onion medley (see Note)
- 1 pint grape tomatoes
- 2 Tbsp olive oil
- 2 tsp minced garlic
- 1 (20.28-oz) pkg frozen Italian five-cheese pizza with brick oven crust (such as Freschetta)
- 2 tsp chopped fresh thyme
Instructions
- Preheat oven to 400°F. Combine zucchini medley, tomatoes, oil, and garlic on a large rimmed baking sheet; spread in a single layer. Bake 20 minutes or until browned and tender.
- Meanwhile, bake pizza according to package directions.
- Spoon vegetable mixture over pizza, and sprinkle with thyme. Cut into squares.

- 1 (13.2-oz) pkg chopped salad kit with sunflower seeds (such as Dole Sunflower Crunch)
- 1 (5-oz) pkg baby kale
- ¼ cup crumbled goat cheese
- ¼ tsp pepper
Side Dish Instructions
- Prepare salad kit according to package directions. Add kale; toss.Top with cheese, and sprinkle with pepper.
