Hoppin' John with Kale
Rosemary-Garlic Brown RiceIngredients
- 1 (10-oz) pkg smoked turkey sausage links, sliced
- 1 (8-oz) pkg chopped onions
- 1 (8-oz) pkg diced tricolor bell peppers
- 1 (15-oz) pkg frozen black-eyed peas, thawed
- 1 (14.5-oz) can roasted garlic diced tomatoes
- 1½ cups low-sodium chicken broth
- 1 Tbsp Creole seasoning
- 2 (5-oz) pkg baby kale
- Hot sauce
Instructions
- Cook sausage, onions, and bell pepper in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until sausage is browned and vegetables are tender.
- Stir in peas, tomatoes, broth, and Creole seasoning; bring to a simmer, and cook 3 to 4 minutes. Stir in kale until wilted.
- Spoon over Rosemary-Garlic Brown Rice recipe; serve with hot sauce.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable brown rice
- ¼ tsp salt
- ½ tsp pepper
- 2 Tbsp chopped green onion
- 2 tsp chopped fresh rosemary
- 1 tsp minced garlic
- 2 Tbsp olive oil
Side Dish Instructions
- Cook rice according to package directions; spoon into a large bowl, and stir in salt and pepper.
- Sauté green onion, rosemary, and garlic in hot oil in a small skillet over medium-high heat 1 minute. Stir into rice.
