Hoppin' John with Kale

Ingredients

  • 1 (10-oz) pkg smoked turkey sausage links, sliced
  • 1 (8-oz) pkg chopped onions
  • 1 (8-oz) pkg diced tricolor bell peppers
  • 1 (15-oz) pkg frozen black-eyed peas, thawed
  • 1 (14.5-oz) can roasted garlic diced tomatoes
  • 1½ cups low-sodium chicken broth
  • 1 Tbsp Creole seasoning
  • 2 (5-oz) pkg baby kale
  • Hot sauce

Instructions

  1. Cook sausage, onions, and bell pepper in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until sausage is browned and vegetables are tender.
  2. Stir in peas, tomatoes, broth, and Creole seasoning; bring to a simmer, and cook 3 to 4 minutes. Stir in kale until wilted.
  3. Spoon over Rosemary-Garlic Brown Rice recipe; serve with hot sauce.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • ¼ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped green onion
  • 2 tsp chopped fresh rosemary
  • 1 tsp minced garlic
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook rice according to package directions; spoon into a large bowl, and stir in salt and pepper.
  2. Sauté green onion, rosemary, and garlic in hot oil in a small skillet over medium-high heat 1 minute. Stir into rice.
