Greek Beef Lettuce Wraps
Cucumbers with Lemon-Dill VinaigretteIngredients
- 2 lb lean ground beef
- ½ tsp salt
- ½ tsp pepper
- 1 small red onion, thinly sliced
- 1 pint grape tomatoes, halved
- ½ cup pitted green olives
- 1 Tbsp chopped fresh oregano
- 2 Tbsp fresh lemon juice
- 2 heads Bibb lettuce, leaves separated
- ½ cup freshly shredded Parmesan cheese
Instructions
- Cook beef, salt, and pepper in a large skillet over medium-high heat 4 to 6 minutes or until browned and crumbly.
- Stir in onion, tomatoes, olives, oregano, and lemon juice. Cook 3 minutes or until thoroughly heated. Spoon onto lettuce leaves; sprinkle with cheese.

- 2 seedless cucumbers, sliced
- 2 Tbsp chopped fresh dill
- 3 Tbsp extra virgin olive oil
- 1½ Tbsp fresh lemon juice
- 2 tsp honey
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Place cucumbers in a large bowl. Whisk together remaining ingredients; pour over cucumbers, and toss.
