Flounder with Pecan Browned Butter
Spinach CouscousIngredients
- 2 flounder fillets
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- 2 Tbsp butter
- 2 Tbsp chopped pecans
Instructions
- Sprinkle fish with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 3 minutes per side or until fish flakes with a fork. Transfer fish to a plate.
- Melt butter in skillet over medium heat. Add nuts; cook 2 to 3 minutes or until butter is browned and nutty. Pour over fish.

- 1 (5-oz) pkg organic baby spinach, chopped
- ½ tsp lemon zest
- 2 tsp fresh lemon juice
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Prepare couscous according to package directions, adding spinach during 5-minute stand time.
- Add lemon zest, juice, oil, salt, and pepper to couscous; toss.
