Flounder with Pecan Browned Butter

Ingredients

  • 2 flounder fillets
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 2 Tbsp chopped pecans

Instructions

  1. Sprinkle fish with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 3 minutes per side or until fish flakes with a fork. Transfer fish to a plate.
  2. Melt butter in skillet over medium heat. Add nuts; cook 2 to 3 minutes or until butter is browned and nutty. Pour over fish.

  • 1 (7.6-oz) pkg whole wheat couscous
  • 1 (5-oz) pkg organic baby spinach, chopped
  • ½ tsp lemon zest
  • 2 tsp fresh lemon juice
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Prepare couscous according to package directions, adding spinach during 5-minute stand time.
  2. Add lemon zest, juice, oil, salt, and pepper to couscous; toss.
