Parmesan Crusted Tilapia Fillets

Ingredients

  • ¾ cup grated Parmesan cheese
  • 2 tsp paprika
  • 1 Tbsp chopped fresh parsley
  • Salt and ground black pepper to taste
  • 4 tilapia fillets

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with aluminum foil.
  2. Whisk Parmesan cheese, paprika, parsley, salt, and pepper together in a shallow dish.
  3. Coat tilapia fillets with olive oil and press into the Parmesan cheese mixture. Arrange coated fillets on the prepared baking sheet.
  4. Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

  • 2 lb red potatoes, quartered
  • ¼ cup butter, melted
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 lemon, juiced
  • 1 Tbsp grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Place potatoes in an 8- x 8-inch baking dish.
  3. In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  4. Bake, covered, in preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.
