Jerk Shrimp Burgers
Ingredients
- 2 lb unpeeled, medium-size raw shrimp
- 1½ cups panko breadcrumbs
- ½ cup finely chopped red bell pepper
- 3 green onions, chopped
- ⅓ cup roasted garlic mayonnaise (such as Hellman's)
- 1 large egg, lightly beaten
- 1 Tbsp salt-free Jerk seasoning
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp extra virgin olive oil
- 6 whole wheat hamburger buns
- 2 Roma tomatoes, sliced
- 6 lettuce leaves
Instructions
- Peel and devein shrimp. Pulse shrimp in a food processor until finely minced. Transfer to a large bowl, and stir in panko, bell pepper, and green onions.
- Stir together mayonnaise, egg, Jerk seasoning, salt, and pepper in a small bowl. Stir into shrimp mixture. Shape into 6 patties.
- Cook patties, in batches, in 1½ Tbsp hot oil per batch in a large nonstick skillet over medium heat 5 to 6 minutes per side or until shrimp turn pink and burgers are firm to the touch.
- Serve burgers on buns with tomatoes and lettuce.
