Jerk Shrimp Burgers

Ingredients

  • 2 lb unpeeled, medium-size raw shrimp
  • 1½ cups panko breadcrumbs
  • ½ cup finely chopped red bell pepper
  • 3 green onions, chopped
  • ⅓ cup roasted garlic mayonnaise (such as Hellman's)
  • 1 large egg, lightly beaten
  • 1 Tbsp salt-free Jerk seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp extra virgin olive oil
  • 6 whole wheat hamburger buns
  • 2 Roma tomatoes, sliced
  • 6 lettuce leaves

Instructions

  1. Peel and devein shrimp. Pulse shrimp in a food processor until finely minced. Transfer to a large bowl, and stir in panko, bell pepper, and green onions.
  2. Stir together mayonnaise, egg, Jerk seasoning, salt, and pepper in a small bowl. Stir into shrimp mixture. Shape into 6 patties.
  3. Cook patties, in batches, in 1½ Tbsp hot oil per batch in a large nonstick skillet over medium heat 5 to 6 minutes per side or until shrimp turn pink and burgers are firm to the touch.
  4. Serve burgers on buns with tomatoes and lettuce.
