Beef Kofta Wraps

Chickpea, Tomato, and Cucumber Toss

Ingredients

  • ½ lb ground beef
  • ¾ tsp ground coriander
  • ¾ tsp minced fresh rosemary (or use 1 tsp dried)
  • 2 cloves garlic, minced
  • 2 gluten-free wraps (such as Toufayan) 
  • 1½ cups baby arugula
  • ¼ cup refrigerated tzatziki sauce

Instructions

  1. Gently mix together beef, coriander, rosemary, garlic, and desired amount of salt and pepper; shape into 4 oblong patties.
  2. Cook patties in a large nonstick skillet over medium-high heat 6 to 8 minutes or until no longer pink, turning occasionally.
  3. Place 2 patties on each wrap; top with arugula and tzatziki sauce.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • ½ cup canned chickpeas, drained and rinsed
  • ½ small English cucumber, coarsely chopped
  • ½ cup grape tomatoes, halved

Side Dish Instructions

  1. Whisk together oil, lemon juice, garlic, and salt and pepper to taste in a large bowl. Add chickpeas, cucumber, and tomatoes; toss.
